Prepping for a three night camping trip at Cafe Mi Casa and Smoked Pulled Pork Enchilada Casserole is always a request from the entire crew. Now it’s in the oven so it can come out, cool down, get cut up into squares and put in the camper for the trip tomorrow.
And it’s pretty self explanatory. Layers of corn tortillas in between everything with a big layer of smoked pulled pork (but you could use chicken or a bunch of veggies) and salsa verde, a layer of shredded Mexican blend cheese with regular tomato salsa and on top a layer of shredded Monterey Jack, crumbled Queso Fresco and your favorite taco sauce. Then into the oven at 350 for about 15-20 minutes and you are good to go.
